Dinosaur Kale

Dinosaur Kale or what gardeners call them Lacinato Kale.  It looks like the skin of a dinosaur, really it does.  I found some at my farmers market a few weeks ago and have bought it every week since.  I like making Kale chips out of them.  I know I have already written about making Kale chips but they are so good for you, that it should be repeated.

Just a bit of sea salt and olive oil and you are there.  Kids will love the name and if you let them help by tearing the kale and sprinkle the salt, they are more likely to eat it.

I like mine extra crispy and almost burned.  I set them on a cookie sheet (not overlapping) at 350 degrees.  I watch them until they are done.  Usually less than 10 min. depending on your oven.  Enjoy.

Crunchy Kale Chips

Our new vice in our home is making kale chips.  We can’t get enough of them.  They taste almost like potato chips.  So easy and healthy too.

Wash and dry your kale.  Separate stems from leaves and tear into bite size pieces.

Toss with olive oil or vegetable oil

Sprinkle with kosher salt. Toss and bake.

Bake at 350 degrees.  Bake for 10-15 min.  Might be a good thing to watch them carefully since each oven is different.   We make ours a bit burnt and extra crunchy.
