Quiches & Quotes

I’ve never done this before but here goes.  This post will be a two in one. You know that one of my goals for this blog is to encourage myself and my readers. The other is sharing good things and wise things as I see and discover them.

I will share some of my favorite encouraging quotes and one of my favorite recipes.

Here is my easy recipe for Quiche

Spinach, Ham & Cheese Quiche

4 eggs

1-1 1/2 cups of half & half or milk

1/2 tsp salt

1/2 tsp pepper

8 oz of thawed and drained frozen spinach

2 slices of ham (cut into bite size pieces)

1 cup of swiss & cheddar cheese

1/4 cup of parmesan cheese for topping

Crust:

make homemade or use store-bought

Mix eggs, milk and salt & pepper set aside

In pie crust layer cheese, spinach and ham

Then pour egg mixture over all

Bake at 350 F for 20-30 min. sprinkle parmesan over top during last few minutes of baking.  Take out when cheese melts and middle is springy to touch.

Other fixin’s as substitutes: bacon, Canadian bacon, sausage, all kinds of cheeses, broccoli, artichokes, asparagus and the list goes on.  If you like it throw it in there.
