I’ve never done this before but here goes. This post will be a two in one. You know that one of my goals for this blog is to encourage myself and my readers. The other is sharing good things and wise things as I see and discover them.
I will share some of my favorite encouraging quotes and one of my favorite recipes.
“I’m too busy to be sad, too positive to be doubtful, too optimistic to be fearful and too determined to be defeated.”
“Opportunity dances with the one who is already on the dance floor.”
“The cave you fear to enter holds the treasures you seek.” J. Campbell
“Smiles are the kissing cousins to laughter.”-Tieraona

Here is my easy recipe for Quiche
Spinach, Ham & Cheese Quiche
1-1 1/2 cups of half & half or milk
1/2 tsp salt
1/2 tsp pepper
8 oz of thawed and drained frozen spinach
2 slices of ham (cut into bite size pieces)
1 cup of swiss & cheddar cheese
1/4 cup of parmesan cheese for topping
make homemade or use store-bought
Mix eggs, milk and salt & pepper set aside
In pie crust layer cheese, spinach and ham
Then pour egg mixture over all
Bake at 350 F for 20-30 min. sprinkle parmesan over top during last few minutes of baking. Take out when cheese melts and middle is springy to touch.
Other fixin’s as substitutes: bacon, Canadian bacon, sausage, all kinds of cheeses, broccoli, artichokes, asparagus and the list goes on. If you like it throw it in there.
